Wanna Knuckle Sandwich??

Order the “Surf & Turf” at The Besh Steak
at Harrah’s, and they’ll give you a knuckle sandwich. 

A sandwich, that is, made of the succulent knuckle and claw meat of a big ol’Maine lobster, lightly dressed with – what else? – drawn butter.  It is piled high atop some delicate micro-greens tossed in a walnut vinaigrette, on a grilled house-made brioche, spread with a little roasted jalapeno-mascarpone.   Not so scary, now, is it? 

And this “surf” doesn’t just accompany the “turf,” it sits right on top of the perfectly aged, perfectly grilled 8-ounce filet of Premium Gold Angus beef, secured with a “potato lollipop” – two paper-thin slices of potato sandwiching a sprig of chervil on a wooden skewer.  All this is surrounded by a savory moat of bordelaise and hollandaise sauces... 

The Knuckle Sandwich is just one of the many playful culinary puns Chef John Besh enlivens his menus with here at The Besh Steak
, and over at Restaurant August.  After all, being rooted firmly in the classics of cuisine and uncompromising in the quality of ingredients allows him a little whimsical latitude when it comes to his creations.   

So c’mon – what are you afraid of?  Try this knuckle sandwich, and you’re likely to beg for another…
